This simple recipe has just three ingredients, the peanut butter adds a serious dose of protein, there’s no but- ter or flour in it, and they are absolutely delicious.
Ingredients:
1 cup peanut butter
1 cup sugar
1 egg
Method:
- Beat egg with a whisk in a medium bowl.
- Add peanut butter and sugar and whisk until fully incorporated and smooth.
- Drop mounds of dough by the table- spoonful onto a baking sheet, spac- ing about 2” apart.
- Lightly press tops of cookies with tines of a fork, making a crosshatch pattern.
- Bake at 180 c, until golden brown, 10–12 minutes.
- Transfer to a wire rack and let cool slightly.
