There are vegetables blended into the tomato sauce and what they can’t see, they can’t pick out. Get your family to eat more vegetables with this super healthy pasta sauce recipe.
Ingredients
1 tbsp olive oil
1 onion, chopped
1 carrot, chopped
1 cup spinach, chopped
1⁄2 cup beans, chopped
1 cup cauliflower, chopped
1 clove garlic, crushed
1 tbsp tomato puree
100 ml vegetable stock
2 cups pasta
1 cup cheese, grated
Method
Heat the oil in a pan. Add the onion, carrot, beans, cauliflower and cook for 10 minutes, stirring occasionally. Add the spinach and cook for a further 5 minutes. Add the crushed garlic and cook for one minute. Stir in the tomato puree and vegetable stock. Cover and simmer for about 20 minutes. Puree with an electric hand blender. Cook the pasta in boiling water according to the instructions on the packet, then drain and stir into the sauce. Sprinkle the cheese over.
